Fermentation:Selected yeast, Max. Temp. 28º C, for 10 days.  20 day maceration.
Aging:100% American oak.
Alcohol:13.2% Vol.
Acidity / pH:5.50 / 3.70
Sugar:3.5 g/l

Tasting Notes:

Colour: deep, intense red with violet hues.
Nose: ripe red and black berry fruit (blackberries, cherries and sourcherries). Subtle vanilla flavors.
Mouthfeel : same flavors perceived on the nose, with a rich, full, fresh attack. Well structured, with a long , persistent finish and soft, sweet tannins.
Food pairing: beef, pasta and wok-sauteed vegetables. Semi-hard cheeses.
Serving temperature: 15/17º C.
